Chocolate Amaretto Cheesecake

Ingredients

Crust..... 1-1/4 cups chocolate wafer crumbs (oreo) 2 tbsp white sugar 1/4 melted margarine Filling.... 500 grams (1 lb) cream cheese 1/2 cup white sugar 2 large eggs 6 oz semi sweet chocolate melted and cooled 1/2 tsp almond flavoring 1 tsp vanilla 1/3 cup amaretto 2/3 cup sour cream Topping..... 2 oz semi sweet chocolate 1 tsp margarine

Method

Springform cheesecake pan 300 1 hr Combine crumbs, sugar and melted margarine. Press into the bottom and 1/2 way up sides of pan. Chill Beat cream cheese well, until smooth. Gradually beat in sugar. Beat in eggs one at a time at low speed. Add cooled chocolate, flavorings, amaretto and sour cream. Beat at low speed until thoroughly blended. Pour into prepared pan. Bake in 300 oven for 1 hour. Turn off the heat and leave cake in oven 1 hour longer. Cool in pan at room temperature and then chill in refrigerator for at least 24 hours. Melt chocolate with margarine and pour over top of cheesecake.

Notes

If you don't have any amaretto you can add a little extra almond flavoring and sour cream. When you cut it use a knife dipped in hot chocolate to avoid cracking the chocolate on top. You can also garnish with whipped cream and almond slices but I figure it's great without it.
