Creamy Peppermint Patties
Ingredients
1 pkg (8 oz) cream cheese softened
1 tsp peppermint extract
9 cups icing sugar
3/4 cup milk chocolate chips
3/4 cup semi sweet chocolate chips
3 tbsps shortening
Method
In a large mixing bowl, beat the cream cheese and extract until smooth. Gradually add sugar, beating well. Shape into 1" balls. Place on waxed paper-lined sheets. Flatten into patties. Cover and refrigerate for 1 hr or until chilled.
In a microwave, melt chips and shortening; stir until smooth. Coll slightly, dip patties in melted choc; place on waxed paper until firm. Store in the fridge. Makes about 4 doz.

Love mint patties and want to make them instead of buying them. Will try this recipe at Xmas this year (2006)
