Feta and Chive Muffins

Ingredients

1-1/2 cups all purpose flour 3 tsp baking powder 1/2 tsp salt 2 eggs 1 cup milk 2 tbsps butter, melted 1/2 cup crumbled feta cheese 3 tbsps snipped chives

Method

In a bowl, combine the flour, baking powder and salt. In another bowl, whisky the eggs, milk and butter; stir into dry ingredients just until moistened. Fold in the feta cheese and chives. Fill greased or paper-lined muffin cups two thirds full. Bake at 400 for 18-22 min or until a toothpick comes out clean. Cool for 5 mins before removing from pan. Serve warm.. Regrigerate leftovers. Makes 12
