Sweet Potato Casserole with Praline Topping
Ingredients
3 cups sweet potatoes, cooked and mashed
1/4 cup sugar
2 tbsp margarine
1 egg
1 tsp vanilla
Topping
1/2 cup brown sugar
2 tbsp flour
2 tbsp margarine, melted
1/4 cup chopped pecans
Method
Whip potatoes while hot. Add remaining ingredients; mix well. Pour into greased casserole dish. Top with topping and bake at 350 for 20 to 25 minutes.
Serves 8
Notes
I made this at Xmas. The only change I would make is put just 1/2 tsp of vanilla. 1 tsp is just too strong a flavor.
