Carol’s Chocolate Chip Cake
Ingredients
1 cup dates or raisins
1 tsp baking soda
1 cup hot water
1 cup white sugar
1 cup margarine
2 eggs
1/2 cup pecans
1-3/4 cups flour
1 tbsp cocoa
1 tsp vanilla
6 oz chocolate chips
Method
13x9 pan 350 for 35-40 minutes
Put baking soda in hot water and add dates/raisins. Set aside and cool.
Cream margarine and sugar together. Add eggs and dry ingredients. Add date mix and 1/2of the nuts and chocolate chips. Pour into greased pan, sprinkle with rest of the nuts and chocolate chips.
Notes
We are not real fans of cooked raisins so I always used dates.
