Red Velvet Cake
Ingredients
1/2 margarine
1-1/2 cups sugar
2 eggs
1 cup buttermilk
2-1/2 cups flour
1/2 tsp salt
2 oz red food colouring (2 bottles)
2 tsp cocoa
1 tsp vanilla
1 tsp baking soda
1 tsp vinegar
Frosting.....
1 cup milk
2 tsp flour
1 cup icing sugar
1/2 cup butter
1/2 cup margarine
1 tsp vanilla
Method
350 2 layer pans
Make a paste with the food coloring and cocoa and set aside
Cream the sugar and margarine together and add the eggs. Add the cocoa and food coloring paste and mix well. Add buttermilk alternately with flour and salt. Add vanilla. Combine the baking soda with the vinegar and fold into the cake batter. Do not beat. Cook.
Frosting......
Combine the milk and the flour and cook over medium heat stirring constantly until thick. Cool
Cream the icing sugar and butter and margarine until smooth and add in vanilla. Add to the cooled mixture
Frost cake and put in fridge to set.
Notes
It will take a few minutes to combine the food coloring and cocoa...take the time.....
If you don't have buttermilk use one cup of milk and add in 1 tbsp of vinegar and let it sit for a few minutes.....using real buttermilk is better though.
When I make the icing I alway make a little more than they say....we do like our icing!!!
