Carrabba’s Chicken Bryan Recipe and Lemon Butter
Ingredients
Lemon Butter
4 tbsp butter, divided
1/4 cup finely chopped onion
1/4 cup finely chopped garlic
1/2 cup white wine
1/2 cup lemon juice
salt and pepper to taste
Chicken Bryan
4 chicken breast
goat cheese (enough to put a layer on breast)
3tbps fresh basil leaves, ,medium chop
6-8 sundried tomato pieced julienned
grill seasoning (something with a little heat to it)
Method
Lemon Butter
Melt 1 tbsp butter and saute onions and garlic until softened.
Add white wine and lemon juice, simmer approx 10 minutes until redued by 90%. Let cool slightly
Add remaining butter a little at a time until mixture emulsified. Do not let the butter get too hot or it will separate. Season to taste.
Add basil and tomatoes to sauce just to warm up just before serving.
Chicken
Take goat cheese out and let soften to room temperature.
Season the chicken breasts and grill.
When chicken is almost ready place goat cheese on top and let soften as the chicken finishes cooking.
Plate the chicken and spoon lemon butter sauce on top of the chicken covering the goat cheese.

Had this at a charity event in Destin. Very tasty and the lemon butter is great on shrimp, kindda like shrimp scampi
