Layered Carrot Cake
Ingredients
2 cups flour
2 tsp baking powder
1.5 tsp baking soda
1 tsp salt
2.5 tsp cinnamon
2 cup sugar
1.5 cups oil
4 large eggs
2 3/4 cups grated carrots
1 can crushed pineapple (drained)
1 3/4 cups coconut
3/4 cup chopped pecans
Icing...
8 oz cream cheese
1/4 lb butter
approx. 1 lb icing sugar
1 tsp vanilla
Method
350 oven
Mix all the dry ingredients together and set aside
Cream the sugar oil and eggs.
Add the dry ingredients to the creamed mixture. Then mix in the carrots, pineapple, coconut and pecans....
place in 2 9" round pans
Bake for approx. 45 minutes or until cooked
Icing....
Cream cream cheese and butter together, add vanilla. Add icing sugar.
When cake is cool ice.
Notes
This is a really yummy carrot cake that I have made....my favorite I think.
