Penne with Chicken, Apples and Cranberries
Ingredients
1 tbsp butter
1 lb chicken breasts cut into strips (I use a roasted chicken from the grocery store, saves alot of time and effort)
4 green onions sliced
2 green apples thinly sliced
pinch nutmeg
salt and pepper
2 tbsp cider vinegar (I find always needs more to add a little punch to the sauce)
1.5 cups whipping cream (usually more required)
1.2 cup craisins
penne
1 cup or more grated old cheddar cheese
chopped fresh chives for garnish...
Method
In lge skillet, melt half of the butter, brown chicken strips, transfer to bowl.
Add remaining butter. Add green onions, apple, nutmeg, 3/4 tsp salt and 1/4 tsp pepper. Cook for approx. 3 minutes or until softened (often takes a little longer)Add vinegar, scaping any bits stuck to pan. Stir in cream and cranberries, bring to boil. Reduce heat and boil gently stirring often for 3 min or until slightly thickened.
Cook pasta.
Add chicken and simmer for 3 min or until chicken fully cooked. Pour over cooked pasta and sprinkle with cheese. Season with salt and pepper. Chives on top for garnish.
Notes
Leftover turkey can be used as well. The cheese is really important. Grate more than you think you will need.... This recipe was from Auntie Debbie
