Bacon, Egg and Toast Cups

Ingredients

3 Tbsps butter melted 6 slices whole-wheat bread 6 full slices of bacon 6 large eggs salt and pepper

Method

Preheat oven to 375 degrees. Lightly butter 6 muffin cups. Cut crusts off of bread and take rolling pin and flatten slices of bread. Press bread into muffin tin and brush with remaining melted butter. Cook bacon until almost crisp. Lay 1 slice of bacon in each cup with edge hanging out. Crack egg over each. Season with salt and pepper. Bake until eggs whites are set. Approx 15-20 minutes. Serve immediately.

Notes

The first time I made these I thought they were good but could be improved soooo...I added in the bottom on top of the bacon slice a spoonful of salsa. I also did them with parmesan or blue cheese sprinkled on the top. For the cooking time..if you are only making 4 or 5 use the middle of the muffin pan and it only takes about 15 minutes to have the yolks just slightly wet. When I made a full pan of 12 it took about 30 minutes.
