BLT Bites

Ingredients

16 to 20 cherry tomatoes (try to pick the larger ones)

4 strips bacon, cooked and crumbled

1/2 cup mayonnaise

1/3 cup finely chopped green onions

3 tbsps grated parmesan

2 tbsps chopped fresh parsley

Method

1. Cut a think slice off each tomato top. Scoop and discard pulp. Invert the tomatoes on a paper towel to drain.

2. Combine the remaining ingredients. Put into tomatoes.

3. Refigerate for serveral hours

Notes

These are ohhh so yummy. I changed the recipe a bit. They called for wayyyyy too much bacon. To fill the tomatoes the easiest way is to put in a plastic bag and pipe into the tomatoes. To keep them from falling over I put them on a plater with cheap white rice. Place saran wrap ontop of the rice otherwise it will stick to the tomatoes
