Curried Chicken

Ingredients

4-6 chicken breasts 1/2 cup flour 2 tsp salt 1 tsp curry powder 1/2 tsp paprika 1/4 tsp ground ginger 1/4 tsp pepper 1/4 cup margarine 2 cups chopped apples 1 small onion chopped 1/2 cup sweetened coconut 2 cups chicken broth 1/2 cup light cream

Method

Combine flour, salt, curry powder,paprika, ginger and pepper. Coat chicken with mixture. Melt butter, brown chicken, cook 20 minutes and set aside. Add apples, onion, and coconut to drippings. Cook 5 minutes. Blend 1/4 flour (mixed with spices) to chicken broth and stir until smooth. Add to ingredients in the skillet. Cook until thickened about 5 minutes. Add cream. Replace chicken. Serve with rice.

Notes

I always use much more curry powder but it depends on how curry you like it (4 tbsp approx.) I also add a can of pineapple to the sauce just before I put the cream in, I also add in the juice. This sauce freezes nicely.
