Valentine Berries and Cream

Ingredients

8 squares semi sweet chocolate 1 tbsp shortening 2 pkgs cream cheese (3 oz each) 1/2 cup butter or margarine 1-1/2 cups icing sugar 1/3 cup cocoa 2 tbsps milk 1 tsp vanilla extract 2-1/2 cups whipping cream whipped, divided 1-1/2 cups fresh strawberries

Method

Line a 9" heart shaped or square baking pan with foil; set aside. In a heavy saucepan over low heat melt chocolate and shortening; stir until smooth. Pour into prepared pan, swirling to coat the bottom and 1-1/2" up the sides. Refirgerate for 1 minute, then swirl the chocolate to reinforce sides of pan. Refirgerate for 30 min or until firm. Using foil ift from pan, remove foil and place on serving plate. In a mixing bowl, beat the cream cheese and butter until smooth. Combine icing sugar and cocoa; add to creamed mixture with milk and vanilla. Beat until smooth. Gently fold in 2/3 of the whipped cream into the cream cheese mixture. Spoon into heart. Use a pastry bag to pipe the remaining cream on the top. Garnish with the berries.

Notes

This is the recipe for the chocolate mousse that you girls like. The first time I made it I made the chocolate box which I thought was alot of work....so...after that I would just buy premade chocolate shells and fill them with the mousse...much much easier, quicker and just as good...no one will know the difference. Instead of the fresh fruit I would make a coulis of raspberries and drizzle it over the top. To make a coulis mix together raspberries and sugar in a saucepan and bring to a boil....place in blender and puree.
