Paskha

Ingredients

2 tsp white sugar 5 cups warm water 3 tsp yeast Mix those three ingredients together and let stand 15 minutes for the yeast to rise Add 5 cups flour. Let rise approx. 3/4 of an hour in a warm place covered. After it has risen put 6 large eggs in bowl and whip until light and frothy. Remove dough from heat. Add 1/3 lb of tender flake and 3/4 cup white sugar, 1 tbsp salt and egg mixture together and mix well. Add 10 cups of flour. Mix together well. Let rise approx. 2.5 hours. Punch down and let rise again. Put dough into greased pan, not too thick. Decorate . Let rise, brush egg on top and sprinkle with seeds. 5 cups flour

Method

Bake at 300 for approx 30 minutes then turn down to 250 and bake for an addition 30 minutes.

Notes

Bushka always made Paskha for Easter and Xmas. There is also a tradition wedding cake made from Paskha that is on the table with a tradition wedding cake at Ukranian weddings.
