Chocolate Fudge Cake

Ingredients

90 g unsalted butter 90 g dark chocolate, chopped 4 eggs, separated 2 tsp vanilla extract 1/4 tsp almond extract 2/3 cup white sugar 2 tbsps rum 1/2 cup ground almonds 1/2 cup flour 1/2 cup cocoa 1/4 cup white sugar, extra Glaze 1/3 cup light corn syrup 30 g unsalted butter 2 tbsps water 100 g dark chocolate

Method

1. Grease a deep 23 cm round cake pan (9"), line base with paper; greease paper. Melt butter and chocolate in heatproof bowl over hot water; cool to room temp. Beat egg yolks, extracts and sugar until pale and thick. Transfer mixture to lge bowl, stir in rum and chocolate mixture, then almonds and sifted flour and cocoa. 2. Beat egg whites until soft peaks form, gradually add extra sugar, beat until dissolved between each addition, fold into chocolate mixture. Spreadinto prepared pan,bake in moderate oven for about 30 min. Stand 5 min before turning onto wire rack. leave cake upside down. 3. Glaze: Combine corn syrup, butter and water in saucepan, stir over heat until mixture comes to the boil,remove from heat. Stir in chocolate stir until smooth. Stand until bubbles subside, stain, spoon warm glze over cold cake. Stand at room temperature until set.

Notes

A very rich dense chocolate cake. It is nice served with a little whipped cream and fruit.
