Creme Brulee

Ingredients

600 mls whipping cream 6 egg yolks 1/4 cup white sugar 2 tsp vanilla extract 1/4 cup white sugar

Method

1. Pour cream into a saucepan, bring to the boil. Combine egg yolks, sugar and vanilla in top half of double boiler, beat with electric mixer until pale and thick. Gradually pour in hot cream while motor is operating. Place mixture over simmering water, stir constantly until mixture thickly coats the wooden spoon. Spoon into 4 ovenproof dishes. Refrigerate until set. 2. Sprinkle sugar over set custards about 1 hour before serving. Place dishes in pan. 3. Pack ice cubes around dishes, place under preheated grill, grill until sugar is lightly browned. Refrigerate until ready to serve.

Notes

My absolute most favorite dessert of all time.....if it is on the menu I must have it. It is really nice served with a little fresh fruit on the side....
