Chocolate Cheesecake
Ingredients
1 cup crushed chocolate wafer crumbs
3 tbsps sugar
3 tbsps melted butter
Filling
2 cups (12 oz) semisweet chocolate chips
2 pkgs (8 oz. each) cream cheese, softened
3/4 cup sugar
2 tbsps flour
2 eggs
1 tsp vanilla extract
Method
In a small bowl, combine cookie crumbs and sugar; stir in butter. Press into bottom of a greased 9" springform pan; set aside. In saucepan over low heat, melt the choco chips; stir until smooth, set aside.
In a mixing bowl, beat cream cheese and sugar until smooth. Add flour and beat well. Add eggs; beat on low just until combined. Stir in vanill and melted choc. just until blended. Pour over crust.
Bake at 350 degrees for 40-45 min or until center is almost set. Cool on a wire rack for 10 min. Carefully run a knife around edge of pan to loosen, cool 1 hour longer. Chill overnight. Garnish with slices of strawberries and chocolate shavings.
Notes
A very rich easy to make chocolate cheesecake. Wonderful with any type of fruit on the side.
