Apple Cinnamon Muffin

Ingredients

  • 1/4 cup ground walnuts
  •  3/4 cup granulated sugar
  • 1-2 tsp ground cinnamon
  • 1/4 cup butter - melted & cooled
  • 1 large egg - beaten
  • 1/2 cup milk
  • 1-1/2 cups flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 cup peeled and grated apples

Method

Preheat oven to 375 Bake 15 to 20 minutes Mix walnuts, 1/4 sugar and 1 tsp cinnamon and set aside. Combine butter, sugar, and egg. Stir in milk. Combine flour, baking powder,1 tsp cinnamon and salt. Add to butter mixture. Stir together, should be lumpy. Fold in apples. Put a little batter in the tins. Sprinkle with most of the sugar and nut mix. Fill tins. Sprinkle with remaining sugar and nut mix.
