Apple-of-Your-Eye Cheesecake
Ingredients
Crust......
1 cup graham crumbs
3 tbsps sugar
1/2 tsp cinnamon
1/4 cup butter melted
2 tbsps finely chopped pecans
Filling...
3 pkgs (8 oz each) cream cheese
3/4 cup white sugar
3 eggs
3/4 tsp vanilla extract
Topping.....
1-1/2 cups chopped peeled apples
1 tbsp lemon juice
1/4 cup white sugar
1/2 tsp cinnamon
caramel ice cream topping
Method
Combine the first five ingredients;press onto the bottom of a lightly greased 9" springform pan. Bake at 350 for 10 minutes, cool.
In mixing bowl, beat cream cheese and sugar until smooth. Add eggs; beat on low just until combines. Stir in vanilla. Pour over crust.
Toss apples with lemon juice, sugar and cinnamon; spoon over filling. Bake at 350 for 55-60 minutes or until center is almost set. Cool on rack for 10 min. Carefully run a knife around edge of pan to loosen. Drizzle with 4 tbsps caramel topping. Cool for 1 hour. Chill overnight. Just before serving drizzle with more caramel sauce. Store in the fridge.

I think besides the chocolate amaretto cheesecake this is the best one I have ever had....easy to make but everyone thinks it was hard to do.
