Baked Scallops with Brie

Ingredients

1 lb scallops brie white wine salt and pepper 4 tbsps olive oil 3 cloves garlic minced dried thyme

Method

Heat the oven to 450 degree. You will need several small oven proof ramekins. Place the scallops in a mixing bowl. Add a quick grinding of the pepper and some salt. Add a small pinch of thyme. Mix together and then add olive oil. Mix again. Put the scallops in the baking dishes and pour in just enough wine to come half way up the scallops. Place 1/4" thick slices of brie on the top of the scallops so that it is about half covered. Bake in 400 degree oven
