Blue and Pear Salmon

Ingredients

2 salmon filets 3 slices bacon, cooked and chopped 1 onion chopped finely 2 cloves garlic finely chopped 1 pear peeled, cleaned and finely diced 1/2 cup white wine 1/4 cup maple syrup 1 tbsp chopped fresh savory or 1 tsp dreied savory salt and pepper to taste 1 - 2 slices of bread crumbled 2 oz blue cheese (or to taste) or Brie,cheddar or gouda whichever you prefer

Method

1. preheat oven to 375 2. Over medium high heat cook bacon then add onion and garlic. Add pears, wine, maple syrup and savory. Season generously and let simmer for 5 minutes 3. Remove from heat and add bread to absorb liquid. 4. On parchment paper place the filet of salmon. But in half, not all the way through creating a pocket. Place dressing inside and top with blue cheese. 5. Bake for approx. 25 to 30 minutes.

Notes

This is really good. In the recipe they put whole filets on top of each other but I cut each in half and stuffed. I found the dressing a tad too mild so I will add some lemon zest to the dressing next time and have fresh lemon to squeeze on top.
