Blueberry Strudel Muffins
Ingredients
2-1/2 cups flour
1-1/4 cup sugar
1 tbsp baking powder
1 cup butter
1/2 tsp cinnamon
3/4 cup milk
2 eggs
1-1/2 tsp vanilla
2 cups blueberries
Method
350 for 30 minutes
Mix together the first 5 ingredients and set aside 3/4 of a cup.
Combine the next 3 ingredients and add to the flour mixture. Add the berries last.
Put in muffin tins and put the reserved mixture on the top
Notes
I don't usually use butter I use margarine. You can mix it half and half to make the muffins richer. I also put a little more than 2 cups of berries. It depends on how fruity you want them to be.
