Carrot Cake
Ingredients
2 cups flour
2 tsp cinnamon
2 tsp baking soda
1 tsp salt
3 eggs
1-1/2 cups white sugar
1 cup oil
2 tsp vanilla
2 cups grated carrots
1 cup shredded coconut
1 cup pecan (walnuts)
1 cup crushed pineapple
Method
350 1 hour 9x13 pan
Mix dry ingredients together.
Beat the eggs and sugar oil and vanilla together. Add the dry ingredients. Add the carrots, coconut, pecans and pineapple. Mix well.
