Figs with Goat Cheese, Pecans and Bacon
Ingredients
4-1/2 fresh figs, halved
5 oz goat cheese
1/2 cup and 2 tbsps toasted, chopped pecans
1-1/4 slices bacon cut in half.
Method
1. Preheat the boiler.
2. Stuff fig halves with goat cheese. Press pecans into the cheese. Wrap each stuffed fig half with half a slice of bacon, securing with toothpicks.
3. Arrange on baking sheet. Broil 5 minutes or until bacon is evenly brown and crisp and goat cheese is bubbly and lightly browned.
Notes
I made these for company and everyone liked them. The second time I made them I partially cooked the bacon because I found they had to be under the broiler for too long for the bacon to cook.
Easy to do and tasty. Finding the fresh figs can be difficult at times but well worth the hunt.
