Layered Vegetable Loaf
Ingredients
1st Layer
2 eggs
1 cup broccoli flowerettes, cook and finely chopped
1 tbsp butter or margarine, softened
1/2 grated cheddar cheese
1/4 tsp onion salt
2nd Layer
2 eggs
1 cup cooked rice
1/4 finely chopped red pepper
1 tbsp butter or margarine, softened
1/2 cup grated mozzarella cheese
1/4 tsp onion salt
3rd Layer
2 eggs
1 cup cooked mashed carrots
1 tbsp margarine or butter, softened
1/2 cup grated cheddar cheese
1/4 tsp onion salt
Method
1st Layer
Spoon beat eggs in bowl. Measure broccoli after it has been cooked and chopped . Add to eggs along with next 3 ingredients. Pack into well greased gread pan.
2nd Layer
Spoon beat eggs. Add next 5 ingredients. Spoon over broccoli layer.
3rd Layer
Spoon beat eggs. Mix in next 4 ingredients. Spread over rice layer. Bake in 325 degree oven for about an hour or until an inserted knife comes out clean. Unmold

This is a recipe that was made at our gourment club.
There is a Cream Sauce that goes with this. I don't usually make it because I don't think it is needed but here it is anyways.....
Cream Sauce
2 tbsp butter or margarine
2 tbsp all purpose flour
1/4 tsp salt
light sprinkle of pepper
1 cup milk
Melt butter in saucepan. Mix in flour, salt and pepper. Add milk. Stir until it boils and thickens. Makes about 1 cup.
