Lemon Coconut Angel Foodcake
Ingredients
1 pkg angel food cake mix
1 pkg lemon pie filling
2 tbsp lemon juice
1 tbsp grated lemon peel
2-1/2 cup whipping cream

Method
Prepare the cake as directed and cool. Meanwhile prepare the pie filling with 2 cups water. Remove from heat and stir in lemon juice and peel. Put in a bowl and cool in the fridge. Split the cake into 5 layers. Whip the cream and take out approx. 1/3 and fold in the coconut. Place the filling in the cake and frost the rest of the cake with the remaining whipped cream. Sprinkle with coconute and refrigerate.
Notes
I usually don't add in the extra lemon juice or peel. But if you have it add it in for a fuller lemon flavor. I put a fair bit of coconut into the filling because I like coconut, but it is up to you. When I put the coconut outside of the cake I often used food coloring to make it yellow just to make the cake look different.
