Lobster Bisque
Ingredients
1/2 lb lobster meat cut into small chunks (I use canned crab meat and shrimp that I cut up)
2 tbsps minced shallots
2 tbsps chopped green onions
3 cloves garlic crushed
1/4 cup white wine
2 tsps worcestershire sauce
2 tsps tabasco sauce
1 tsp dried thyme
6 tbsps dry sherry
1 tsp paprika
1 cup hot water
1 tsp lobster base
4 oz tomato paste
2 bay leaves
2 cups heavy whipping cream
4 tbsps butter
Method
1. In saute pan heat a little oil and saute shallots, onions, and garlic for one minute.
2. Deglaze the pan with the white wine.
3. Add the worchestershire, tabasco and thyme and saute for another minute.
4. Deglaze the pan with the sherry.
5. Add paprika,hot water and lobster base and combine well.
6. Stir in tomato paste and add the bay leaves.
7. Simmer for 10 minutes.
8. Whisk in heavy cream and add the butter and bring to a boil.
9. Add seafood and heat through.
10. At this point you can either leave it chunky or I puree it.
Notes
Too expensive to use lobster so I used crab meat and shrimp and the taste is just as good. I replace the hot water and lobster base with clam juice. I also like to put a little parmesan on top when I serve it. Just adds another little flavor. Servie it with a nice crusty bread....Yummmmmm
