Mushroom spinach baked eggs
Ingredients
2tbsps olive oil
1 small onion chopped
1 lb mushrooms sliced
6 cups fresh baby spinach
6 slices bread
6 leg eggs
1/2 cup milk
3/4 cup shredded gruyere cheese
Method
1. Heat oil in pan, add onion cook til golden. Add mushrooms and cook til brown. Add 1/2 tsp salt and pepper to taste. Add spinach and cooktil wilted. Take off heat and cool.
2. 9x13 pan oiled. Arrange bread slightly overlapped. Spoon mixture on top. Can cover and refridge over night.
3. Preheat 350 . Coach egg onto each piece of bread. Season salt and pepper. Pour milk evenly over top and sprinkle with cheese.
Bake til egg whites are set 25-30 min
