Orange Pearls in Chocolate Shells

Ingredients

1 (12 oz) Pkg semi sweet chocolate chips 1 tbsp shortening 1 envelope unflavored gelatin 1/2 cup cold water 1 (8 oz) container light cream cheese 1/4 cup white sugar 1/2 cup orange juice 1 tsp grated orange peel 2 cups cool whip

Method

- Cover outside of 12 seashells with foil, smoothing until tight. - Melt chocolate chips with shortening over low heat stirring constantly. - Spread chocolate mixture thinkly over each seashell with brush. Chill 10 min. keeping remaining choc mixture warm. Apply second coat. Chill until set. - Remove chocolate covered foil from shell; carefully peel foil from choc. Chill shells until ready to serve. If chocolate shells crack brush crack with melted chocolate and refrig until firm. - Soften gelatin in water in saucepan. Stir over low heat until dissolved. - Beat cream cheese and sugar in lge mixing bowl at med speed until well blended. Stir in gelatin and orange juice and peel. Chill until thickened but not set. - Beat cream cheese mixture until ight and fluffy; fold in cool whip. - Spoon approx. 1/3 cup cream cheese mixture into each shell. Garnish with chocl lace, orange segments and fresh mint.

From the gourmet club. A nice light desset after a big meal. You can always just buy chocolate cups already made to make life easier, which is what I would do!
