Pear Stuffed Tenderloin

Ingredients

1 cup chopped peeled ripe pears 1/4 cup chopped hazelnuts or almonds toasted 1/4 cup soft bread crumbs 1/4 cup finely shredded carrot 2 tbsps chopped onion 1/8 tsp ground ginger or 1/2 tsp minced fresh gingerroot 1/4 tsp salt 1/4 tsp pepper vegetable oil 2 tbsps orange marmalade

Method

In a bowl combine the first 8 ingredients; set aside. Make a lengthwise cut 3/4 of the way through the tenderloin; open and flatted to 1/4" thickness. Spread pear mixture over tenderloin. Roll up from a long side; tuck in ends. Secure with toothpicks. Place tenderloin on a rack in a shallow roasting pan. Brush lightly with oil. Bake, uncovered at 425 degrees for 20-25 min. Brush with marmalade bake 5-10 min longer or until done. Let stand for 5 minutes. Discard toothpicks and slice.
