Ingredients

10-20 lbs of potatoes velveeta cheese Dough........ 2 cups flour 1 cup mashed potatoes 2 eggs pinch salt

Method

Peel and boil potatoes. Mash until very smooth and add in velveeta cheese and whip until melted and to desired flavor. Dough...... Mix the flour, mashed potatoes, eggs and salt together. Knead until smooth. Let relax for 30 minutes. Either use a perogy maker or cut squares of desired size and put the potato mixture in the middle and seal shut. To cook...bring water to a boil and gently add in perogies. Cook until they float on the top and are soft to touch.

Notes

This is bushkas recipe. When I make the dough I use the mashed potatoes that have the cheese in them..I find it makes a more tender dough and of course makes it tastier. The amount of cheese that you put in depends on your. Taste the potatoes as you add the cheese until you get the taste you want. We like our cheesy so I put in quite a bit of cheese. If they aren't cheesy enough they are pretty tasteless. You can also fry them after they are boiled if you like them a little crispy. Fry up either onions and butter or some bacon and put on the top of them to serve.
