Pineapple Carrot Cake

Ingredients

Mix in bowl by hand: 2/3 cup vegetable oil 2 eggs 1 cup fine grated carrots 1/2 cup crushed pineapple 1 tsp vanilla Add dry ingredients: 1.5 cups flour 1 cup white sugar 1 tsp baking powder 1 tsp baking soda 1 tsp cinnamon 1/2 tsp salt Icing 3 oz cream cheese 3 to 4 tbsp butter 1 tsp vanilla dash salt 2.5 cups icing sugar

Method

Mix all the ingredients together for 2 minutes at medium speed. BAke in 9"x9" x 2 pans at 350 degrees for 35 minutes. Cool Cake. Icing Mix all the ingredients together until smooth. You might need to add a little milk. Spread on cooled cake.
