Pineapple Squares
Ingredients
Part 1
1/2 cup butter
2 egg yolks
1 tsp baking powder
1/2 brown sugar
1-1/2 cups flour
1 tsp vanilla
Part 2
1 can crushed pineapple
1 tbsp cornstarch
Part 3
2 egg whites
1 cup brown sugar
1/3 cup chopped pecans
Method
350 8x8
Part 1
Cream butter and sugar, add egg yolks and vanilla. Work in flour and baking powder. Bake 20 minutes.
Part 2
Bring crushed pineapple to a boil and thicken with cornstarch. Spread on shortbread.
Part 3
Beat egg whites stiff and add brown sugar gradually. Beat til thick. Spread over pineapple. Sprinkle with nuts and return to oven to brown.
