Pork Tenderloin Stuffed with Ginger and Dates
Ingredients
4 Pork tenderloins
1 tbsp vegetable oil
Stuffing
2 cups fresh bread crumbs
1 tbsp vegetable oil
1 onion chopped
1 apple, peeled and diced
2 tbsp minced gingerroot
1/2 cup chopped dates
1 tbsp grated lemon rind
1/2 tsp salt
1/4 tsp cinnamom
1/4 tsp pepper
Method
Stuffing
Spread bread crumbs on baking sheet; bake in 350 degree oven for 10 -15 minutes or until golden brown; set aside.
Meanwhile in skillet, heat oil over medium heat, cook onion, apple and ginger, stirring often, for about 8 min or until apples are tender. Stir in bread crumbs, dates, lemon rind, salt, cinnamon and pepper until well combined. Remove from heat and set aside.
Trim any fat from tenderloins; cut in half lengthwise almost but not all the way through; open out flat. Spoon stuffing lengthwise along centre of tenderloins and pat down. Fold over to enclose stuffing. Secure with skewers or string.
In a clean skillet, heat oil over medium high heat; brown tenderloins on all sides. Transfer to rack in roasting pan; roast in 350 degree oven for about 40 minutes. Ten for 10 min before cutting.
