Saucy Shrimp from Bonefish Grill
Ingredients
1 oz butter
5 oz shrimp, cleaned
4 kalamata olives (you need to add a few more Approx. 4 per person)
1/4 of lime tomato garlic sauce (below)
2 oz feta cheese, crumbled
fresh parsley
Nice loaf of crispy fresh bread
Lime Tomtato Garlic Sauce (LTGS)
1/2 cup roughly chopped sundried tomatoes
1/2 cup chopped fresh tomatoes (nicely diced)
1/4 cup lemon juice
juice from 2 limes
1/4 cup chopped garlic
1/2 cup white wine
5 tbls granulated sugar
1 cup heavy cream
2 tsps salt
1 tsp pepper
2 tbsps butter cut into pieces
Method
For the LTG Sauce
Put everything except the cream, butter and salt and pepper into a saute pan. Let cook and reduce by half.
Add the cream, salt and pepper and let simmer til thickened. On low heat slowly add the butter until melted.
To make saucy shrimp:
1. Add utter to saute pan. Saute shrimp, olives, and sun dried tomatoes until shrimp opaque.
2. Add 1/4 of the LTGS. Toss with the shrimp and remove pan from heat.
3. Top with crumbled feta and a pinch of parsley
Notes
When I made these I made 1/2 of the LTGS recipe and I used it all so it would be nice and saucy to dip the bread into. I also added a little more cream to the sauce til I had the flavor I wanted.
The recipe calls for tooooo many sundried tomatoes. I would put half what they are calling for next time but you can put it to taste.
