Snowballs

Peel and boil fair sized potato. Dry over heat and mash it well. Add almond or vanilla flavoring to taste. Keep adding icing sugar until you have a paste. Melt sweetened chocolate in top of double boiler. Form little balls of the paste and dip in chocolate then into shredded coconut. Put on wax paper and cool before storing.
