Stuffed Breasts of Chicken

Ingredients

2 boneless chicken breasts 2 tbsps butter 2 tbsps chopped onion 2 tbsps chopped celery 1 cup dry breadcrumbs 1 tbsp chives 1/4 tsp poultry seasoning 1/16 tsp salt pinch pepper 1-1/2 tbsps milk

Method

Remove skin from chicken breasts. Melt butter in pan. Add onion and celery. Saute until onion is soft and clear. Remove from heat. Add breadcrumbs, chives, poultry seasoning, salt and pepper. Stir well to mix. Add more milk if needed to make dressing cling together. Divide between breasts to make a mound along the center length. Close and secure with picks. Place in baking dish. Spoon some marmalade orange sauce over top. Bake uncoveredin 325 degree oven until tender, about 45 min. slice and arrange on plates. Spoon additional sauce over slices. Serves 2 generously. Marmalade Orange Sauce 1/2 cup orange marmalade 1 tbsp concentrated orange juice Stir marmalade and concentratedjuice together in saucepan over low heat. Spoon some over chicken breasts to bake. Spoon rest of sauce over top before serving.
