Surprise Angel Pecan Pie

Ingredients

3 egg whites, room temp 1/8tsp salt 1 cup white sugar 1 tsp vanilla extract 3/4 cup chopped pecans 3/4 cup crushed soda crackers 1 tsp double acting baking powder 1 cup whipping cream

Method

1. Preheat oven to 350 degrees. Grease a 9" pie plate; line with foil and greast. 2. Beat egg whites and salt until soft peaks form. Gradually sprinkle in sugar 2 tbsp at a time beating well after each addition continue until whites stand in stiff glossy peaks. Lightly beat in 1 tsp vanilla. 3. Into egg whites, fold pecans, crackers and baking powder. Spread evenly in pie plate. Bake 35 min or until light golden but not brown. Cool on rack 2 hrs. Using foil, lift pie from plate; refrigerate until pie is thoroughly chilled. 4. To serve remove foil; place pie on plate. Beat cream with 2 tbsp sugar and 1 tsp vanilla until stiff peaks form. Spread mixture over pie.
