Wild Berry-Oatmeal Cheesecake Muffins
Ingredients
1 cup large flake rolled oats
1 cup buttermilk
1 pkg cream cheese softened
1/4 cup sugar
3 tbsp orange zest
1 cup flour
3/4 cup packed brown sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 egg, beaten
1/4 cup melted butter
1 cup fresh or frozen mixed berries
Method
oven 350
1. Combine oats and buttermilk and let stand 10 minutes
2. Beat cream cheese, granulated sugar and zest until well blended, set aside.
3. Mix flour, brown sugar, baking powder, baking soda and salt in large bowl.
4. Add egg and butter to oat mixture, stir until well blended. Add dry ingredients and stir just until moistened.
5. Gently stir in berries
6. Spoon half the butter evenly into 12 muffin cups lined with giant paper liners, filling each liner half full.
7. Top each with 2 tbsps cream cheese filling. Cover with remaining batter.
8. Bake 25 to 27 minutes until toothpick comes out clean
